Pineapple juice is a good source of potassium, vitamin C, and enzymes. Juicing pineapples is particularly known to provide an alkaline substance called bromeliad, which aids in digestion and and is linked to a reduction of inflammation in arthritis and other inflammatory conditions.

For juicing, choose large, firm pineapples that are heavy and yellow all over. The more heavy the fruit, the more juice it contains. About 1/3 of a medium sized pineapple yields 1/2 cup juice.

Preparation: Cut off top and bottom of fruit, and slice down the sides to remove skin. Cut in half or in wedges without trimming away the woody core.
